Portuguese Salt Crusted Baked Potatoes



A tasty and different way to cook potatoes is with Portuguese Salt Crusted Baked Potatoes. The salt crust helps keep the moisture in, so the potatoes are soft and perfectly seasoned, with a hint of garlic and parsley.

Ingredients:

  • 4 large potatoes
  • 2 cups coarse sea salt
  • 2 egg whites
  • Water, as needed
  • 4 cloves garlic, minced
  • 2 tablespoons olive oil
  • 1 tablespoon chopped fresh parsley
  • 1 lemon, cut into wedges

Instructions:

Turn on the oven and heat it up to 400F 200C

Clean the potatoes with a brush and dry them with paper towels

Mix the egg whites and sea salt in a bowl until the mixture looks like wet sand

Slowly add water until the mixture sticks together

Place a layer of the salt mix on the base of a baking dish

Put the potatoes on top of the salt mixture, and then cover them with the rest of the salt mixture, pressing it down gently to make it stick

Put the potatoes in an oven that has already been heated for about an hour, or until they are soft

Put the olive oil in a small pan and heat it over medium heat while the potatoes are baking

Add the minced garlic and cook for one to two minutes, until the garlic smells good

Take the pan off the heat

When the potatoes are done, carefully take them out of the salt crust by cracking it open

Cut each potato in half and drizzle with the olive oil that has garlic in it

Add chopped parsley on top, and serve with lemon wedges on the side
