Ingredients:
- 1 lb ground turkey
- 1 cup brown rice, uncooked
- 6 cups chicken broth
- 1 onion, diced
- 3 cloves garlic, minced
- 2 carrots, sliced
- 2 stalks celery, sliced
- 1 bunch kale, chopped
- 1 tsp dried thyme
- 1 tsp dried rosemary
- Salt and pepper to taste
Instructions:
In a skillet, brown the ground turkey over medium heat until cooked through
Drain any excess fat
Transfer the cooked turkey to a slow cooker
Add the uncooked brown rice, chicken broth, diced onion, minced garlic, sliced carrots, sliced celery, chopped kale, dried thyme, dried rosemary, salt, and pepper to the slow cooker
Stir well to combine all ingredients
Cover and cook on low for 6-8 hours or on high for 3-4 hours, or until the rice is tender and the vegetables are cooked to your liking
