Ingredients:
- 1/4 cup hummus
- 2 slices whole grain bread
- 1/4 cup cucumber, thinly sliced
- 1/4 cup bell pepper, thinly sliced
- 1/4 cup tomato, thinly sliced
- 1/4 cup red onion, thinly sliced
- 1/2 avocado, sliced
- Handful of baby spinach leaves
- Salt and pepper, to taste
Instructions:
Put the same amount of hummus on one side of each piece of bread
On one piece of bread, put avocado, bell pepper, tomato, red onion, cucumber, and spinach
Add pepper and salt
Put the other piece of bread on top to make a sandwich
If you want, cut it in half and serve
